 Post subject: How to make perfect dosai mixture

Can someone pls give me a simple receipe for the dosai mixture. I use "Gits" made in India readymade mixture & follow the instructions but mine break up when transferring to plate.

1 cup Urad
4 cup Rice
10-12 Methre seeds

Soak all of the above overnite.(rice seperately) Grind the rice into a very fine paste adding the least amount of water possible.Now grind urad & methre. Mix both the pastes. Leave it covered in a warm place for fermentation for about 6 to 8 hrs.Take little portions of the mixture add salt & water to it & make crispy Dosai

1 cup Urad Dal
3 Cups of par boiled rice or idly rice
3/4 Cup of white rice
1 TSP Menthi seeds

Soak Dal and Rice separately and sprinkle Menthi seeds equally in both of them. After 8 hrs grind them separately and mix them together with some salt and let it stay for fermentation. The same mixture can be used for idly too.

Note: It usually takes 12 to 24 hrs for fermentation.

in hot season,8 to 10 hrs r enough for fermentation.i take 1cup each raw rice & boiled rice & 1/2 cup urud dal& 1 tsp of methi seeds.it should be fermented well.

it should be fermented only upto 8 hrs in summer.i use 1 cup raw rice,1cup boiled rice,& 1/2 cup urud dal.for dosa .
