Tandoori Chicken


Ingredients:

2 lbs chicken legs thighs & drumsticks attached
1 tbsp lemon juice
1 tsp yellow and red food coloring
1 tbsp chili powder
2 tsp coriander (finely chopped)
1 tbsp cumin seeds powder
11/4 cup plain yogurt
1 tbsp fresh ginger grated
1 tsp garlic paste
1/4 cup ghee or Vegetable oil
Salt to taste



Tandoori Chicken

Method:

1.Remove the skin from chicken pieces and cut them lengthwise
2.Mix lemon juice food coloring salt chili powder cumin powder and coriander in a bowl and brush the chicken pieces evenly to coat
3.Mix yogurt ginger and garlic in a separate bowl and apply to the chicken pieces.
4.Marinate the pieces in refrigerator turning pieces occasionally for 4-6 hours and let them at room temperature one hour before cooking.
5.Preheat the oven to 500 degrees F and place the chicken in single layer in a greased shallow baking pan.
6.Brush chicken with 2 tbsp of ghee and bake them for 12 minutes.
7.Turn pieces over brush with remaining 2 tbsp of ghee and continue baking until chicken is cooked through and tender about 15 minutes.
8.Serve hot with fresh coriander on it.

TANDOORI CHICKEN ( Serves 4)

4 cm piece of ginger root
1 clove of garlic
2 onions sliced into rings
300 ml natural yoghurt
1 medium chicken skinned and cut into portions
2 cinnamon sticks
1 bay leaf
10 cloves
8 black peppercorns
3 cardamoms peeled and crushed
150 ml lemon juice
10 ml chilli powder
5 ml cumin seeds
salt
50g ghee
5 ml garam masala
1 lemon sliced


METHOD

1. Grind together the ginger garlic 1 onion and the yoghurt.
2. Spread the mixture all over the chicken pieces and leave to marinate for 5 hours.
3. Grind together the cinnamon bay leaf cloves peppercorns and cardamoms. Mix with the lemon juice chilli powder and cumin seeds. Make slashes with a sharp knife on the chicken pieces and smear them with the mixture. Sprinkle with salt and leave to stand for 1 hour.
4. Thread the chicken pieces on to skewers brush them with melted butter or ghee and place into the tandoor turning frequently basting as required.
5. Serve with garam masala and garnished with the lemon slices and remaining onion rings.
